Meatball zucchini boats

  • 3 Large Zucchini cut in half lengthwise
  • 1 tbsp. Olive Oil
  • ½ tsp. Garlic Powder
  • ½ tsp. Italian Seasoning
  • 1 tbsp. Olive Oil
  • 1 lb. Beef (Ground)
  • ¼ cup. Parsley (Chopped)
  • 2 tsp. Garlic (Minced)
  • 1 Large Egg
  • 1 cup Mozzarella Cheese (Shredded)
  • 2 cups Marinara Sauce
  • ½ cup Parmesan Cheese Grated
  • Salt and Pepper to Taste

In a mixing bowl, knead together the ground beef, egg, parsley, minced garlic, and salt and pepper to taste. Heat the oven to 350 degrees.

Hollow out the center of each zucchini half to form a boat.

Place the zucchini boats in a 9×13 baking dish, drizzle with the olive oil, and season with garlic powder, Italian seasoning, and salt and pepper to taste.

Bake the zucchini for 12 minutes. While the zucchini is baking, add the olive oil to a skillet over medium-high heat.

Form the meat mixture into 20-24 balls, and cook for 2 minutes per side until brown. Reduce the heat to medium and pour in the marinara. Saute for 10 more minutes in the sauce.

Top the cooked zucchini boats with the sauce and meatballs. Sprinkle with the mozzarella cheese. Turn the oven to broil on high.

Broil until the cheese is melted, and top with the parmesan before serving.
